Emily's Meatloaf

Ingregients:
1-1.5 lbs Hamburger
1 egg
1 package of onion soup mix
1 small can tomato sauce
1 small onion
1/2 bell pepper
1/4 cup oatmeal
Tbls. worchestershire sauce

Topping:
1 can tomatosoup

Preheat the oven to 350.  Mix the ingredients in a largebowl. (tip: take off your rings and get in there with your hands!) (tip 2: use the can from the tomato sauce to measure your oatmeal and eyeball your worchestershire sauce.  Now your down two dishes to wash!)  Spread the mixture in a medium size baking dish and cook for 45 min.  Top with tomato soup and cook another 20-30 min.  Let sit for 15 min. if you can wait long enough for it to "loaf".  If not, it taste the same if you have to eat it right away!

Herb Encrusted Talapia

Ingredients:
3.5 oz. Talapia
1 melba toast
Majorim
Oregino
Basil
Thyme

Directions:

Pre-heat the oven to 350.  Crunch up the melba toast (I used the end of a knife).  Liberally sprinkle the toast crumbs with the spices.  (you could add red pepper flakes for some spice).  Coat the fish with the crumb/spice mixture.  Bake for approximatly 20 minutes.

Bruccetta Chicken

Ingredients:
3.5 oz Chicken
Grissini Stick
3.5 oz Tomatoe
Basil
Thyme
Apple Cider Vinegar

Directions:
Pre-heat oven to 350. Crush Grissini stick and coat chicken with it.  Bake for 30 min.  Dice tomato and add basil, thyme, and a splash of Vinegar. Refridgerate.  When chicken is done, top with  tomato mixture.

Beef/Chicken Fajitas

3.5 oz Beef or Chicken
Worchestershire sauce
Lemon Juice
Soy Sauce
1 tsp cummin
3.5 oz onion

Directions:
Marinate Beef or chicken in worchestershire sauce, lemon juice, soy sauce and cummin.  On high heat sear meat on all sides.  Add onion and marinade, saute until done.

Crab Bisque

Ingredients:
3.5 oz Crab
1/2 cup tomato
1 cup vegitable broth
1/2 tbls onion
clove of garlic
1-2tbls Old Bay Seasoning

Diretions:
Puree tomato and broth.  Put tomato mixture and the rest of the ingredients in a pan.  Simmer 20-30 min.

Apple Chips

1 apple
1 tsp Vanilla powder
1/2 tsp Cinnimon
1 packet Stevia

Directions:

Take the stem and the green bottom of the apple off.  You don't have to core.  Slice the apple like potato chips into 8-10 pieces.  Pick the seed pieces out.  If you slice from tip to bottom instead of side to side you get a neat star pattern!  Put the seasonings in a ziplock bag then add apples and shake.  Place the apple peices in your oven on it's lowest tempurature.  Depending on the thickness of the slices it will take 2-3 hours to dehydrate.  You can place a wooden spoon in the oven door to keep it slightly open to help with the dedydrating.  Let cool and enjoy!  I do several apples at a time.  They will keep well.

Barbeque Sauce

3 oz tomato paste
¼ cup apple cider vinegar
3 tablespoons lemon juice
1 tablespoon hot sauce
1 tablespoon minced onion
3 cloves minced garlic
¼ teaspoon chili powder
½ teaspoon Worcestershire sauce
½ teaspoon onion salt
1 packet stevia
½ teaspoon vanilla powder
½ teaspoon paprika
¼-1 teaspoon cayenne pepper to taste

Mix all ingredients and simmer 5 minutes. Makes 2 servings

“Pulled Pork Sandwiches”

1 serving barbeque sauce
3.5 oz chicken
½ chopped onion
2 sourdough melba toast

Place all ingredients except melba toast in a sauce pan. Cover with water. Simmer until chicken is done adding water as needed. Shred chicken and reduce sauce to a paste like texture. Serve on Melba toast.
